Week of September 25: It's Officially Fall!
It's finally fall, but I'm not quitting summer veggies! Plus I'm still trying to conquer school lunches.
It’s officially fall, according to the calendar anyway. We’re still getting some veggies from our garden, and I’m not ready to quit them! Lunches are still bumpy. I’ve been sick so I haven’t been as on top of it as I had hoped. This week, I hope to make some things ahead to make it smoother!
Week of September 25
SUNDAY
Prep/Freezing: Slicing and Dicing! I’m going to try to prep for school lunches by sorting out the fruit and veggies and making the Ham and Cheese muffins. I’ll roast the butternut squash too.
MONDAY
Breakfast: Cereal
Lunch: Mac n Cheese (can add cubed roasted butternut squash)
Dinner: Frittata with Roasted Potatoes
TUESDAY
Breakfast: Eggs and Toast
Lunch: Hummus, Pita Crackers, Olives, Grape Tomatoes, and Cheese
Dinner: Chicken Picatta with Pasta
WEDNESDAY
Breakfast: Oatmeal with Toppings
Lunch: Ham and Cheese Muffins with Honey Mustard Dip
Dinner: Salmon Cakes with Tomato and Feta Salad
THURSDAY
Breakfast: Toast with Toppings plus Yogurt
Lunch: PB&J Sandwich
Dinner: Grilled Flatbread Pizzas and Salad Kit
FRIDAY
Breakfast: Waffles
Lunch: Parfaits with Fruit
Dinner: Dinner out!
