Week of October 2: Finally October!
One of my favorite times of year! Some slow-cooker carnitas, an end-of-summer pasta, and my favorite grilled salmon!
I have to say that I’m happy to see September in the rearview mirror. It was a rough month for the Perry family. I was sick for almost all of it. And we all know there are no sick days for parents. October is one of my favorite times of the year. I love Halloween. And we live in the South, so October is the start of tolerable weather.
Here are some recipes I’m maing this week. Slow cooker carnitas that can be reheated for staggered dinners. A pasta that keeps some summer flavors and uses up a lot of herbs from the garden. And it’s cool enough outside for the grill, so delicious grilled salmon. And finally, I plan to make some cheddar biscuits that will be good for dinners and lunchboxes.
Week of October 2
SUNDAY
Prep/Freezing: Prepping the fruit and veggies for school lunches. Making cheddar biscuits. Prep marinade for salmon. Make Mac n Cheese Bites.
MONDAY
Breakfast: Scones (can make or buy)
Lunch: Mac n Cheese Bites
Dinner: Grilled Salmon and Veggies
TUESDAY
Breakfast: Eggs and Toast
Lunch: Salami, Cucumbers, Crackers, Hummus
Dinner: Linguini with Chicken, Blistered Tomatoes, Mozzarella and Herb Pesto
WEDNESDAY
Breakfast: Cereal
Lunch: Banana Bread with Cream Cheese
Dinner: Slow Cooker Carnitas with Taco Fixings
THURSDAY
Breakfast: Waffles
Lunch: Quesadillas (you can add leftover carnitas, if you want)
Dinner: Brinner (Eggs, Bacon, Fruit)
FRIDAY
Breakfast: Toast with Toppings plus Yogurt
Lunch: Cheddar Biscuits
Dinner: Dinner out!
