Week of November 6: Crockpot to the Rescue?
Trying to save my sanity with more crockpot meals that don't require me to brown meat at 6am!
I was chatting with a friend on the sidelines of a soccer game the other day, and of course, what we were having for dinner came up. Both of us were a little flustered about it. I had a plan but didn’t get it together before practice so dinner would be late that night. She was ordering takeout from the field. Both of our situations were totally fine. But, she told me about a mutual friend who makes crockpot meals several nights a week, so she doesn’t have the pre-or-post soccer practice dinner scramble. She gets the meal ready BEFORE school drop off. I can’t even fathom that. We are a mess of lost socks and tangled hair every morning. There’s no way I could brown some meat in all that chaos. I’m also not a big crockpot girl because I associate them with the heavy post-church meals of my childhood. But, I want the relaxed evening that having a crockpot meal would bring.
I did some research and discovered this cute cookbook, Fresh Flavors for the Slow Cooker. The recipes are modern and relatively light. I don’t think I’ll start searing meat while getting kids breakfast, but I’m pretty sure I can manage some prep the night before. Adding some crockpot recipes to the mix!
I also included one of our favorite weeknight dishes - beefy noodle bake. It’s old-fashioned, but quick and filling. And it’s a crowd favorite.
SUNDAY
Prep/Freezing: Make the stovetop prep of the crockpot meal and refrigerate. Can also do this the night before.
MONDAY
Breakfast: Parfaits with Fruit
Lunch: Mac n Cheese Bites
Dinner: Fusilli with Roasted Cauliflower (Side note: I LOVE roasted cauliflower) and Side Salad
TUESDAY
Breakfast: Eggs and Toast
Lunch: Pita Chips, Hummus, Cheese and Fruit
Dinner: Crockpot Alert! Chicken Tikka Masala with Garlic Naan
WEDNESDAY
Breakfast: French Toast Sticks
Lunch: Nutella + Banana Sandwiches
Dinner: Chicken Tortilla Soup with Fixings!
THURSDAY
Breakfast: Waffles
Lunch: PB&J Sandwiches
Dinner: Beefy Noodle Bake with Salad
FRIDAY
Breakfast: Cereal
Lunch: Mini Waffle Sandwiches
Dinner: Out
