Week of May 29: Last Week Before Summer!
Last week of school! Woohoo! I'm planning to use part of the holiday weekend to stock up my freezer because this week is crazy.
We’re in the last week of school! I can’t believe it! I plan to put some things in the freezer on Sunday (or Monday) because we have a wild week of end-of-year events. I also want to enjoy our time together before our daughter goes to camp for a month(!) at the end of the week.
One of my favorite things to make these days is roasted bell peppers. Groundbreaking, I know, but these are more like a side dish than a condiment. My kids love bell peppers. They’re sweet and colorful - what’s not to like? These are going to be in heavy rotation this summer.
The recipe below is from the old Martha Stewart Everyday Food Magazine. I subscribed to it in my early 20s when I lived in NYC and didn’t even really have a kitchen, but I kept all of them and use them all the time now!
Week of May 22
SUNDAY
Prep/Freezing: Risotto, Pulled Pork (big recipe!)
MONDAY
Breakfast: Bagel with Cream Cheese
Lunch: Mini Quiches (you can make or buy)
Dinner: Spaghetti with Three-Tomato Sauce and Salad Mix
TUESDAY
Breakfast: Toasts with Toppings (peanut butter, cheese, etc.)
Lunch: Mac N Cheese
Dinner: Carnitas Tacos with Corn and Guacamole
WEDNESDAY
Breakfast: Eggs and Toast
Lunch: Grilled Cheese
Dinner: Salmon Cakes with Tartar Sauce and Cucumber/Tomato Salad
THURSDAY
Breakfast: Cereal
Lunch: Veggie and Cream Cheese Roll Up
Dinner: Grilled Shrimp with Risotto and Roasted Peppers
FRIDAY (Last day of school!)
Breakfast: Oatmeal with Toppings
Lunch: Mini Pancake, Cream Cheese and Jelly Sandwiches
Dinner: Pizza Party to celebrate end of school!
