Week of June 12: Settling Into Summer
Our first week of summer is in the books! And we're loving the slower pace!
We’ve been settling into the new routine of summer. I’m so happy for things to slow down a bit. Louisa, our oldest, is already at sleepaway camp, so we’re down to two kids for a few weeks. It’s so quiet without her, which I don’t love!
Our garden is just starting to produce, and I’m so excited! I’m doing some more plantings this weekend. We got a late start with our garden this year because our family was sick for the entire month of May. The good part about gardening in this area is that we have a long growing season, so a late start just means more veggies in September!
I did find time to plan a quick herb garden. Our basil is thriving right now, so I’m making a big batch of pesto this week. We like to keep some in the freezer for easy meals. I’ll make some basil oil too. If you haven’t tried basil oil yet, do it! It’s like pesto, but without the cheese and pine nuts. It’s great for drizzling on toasts, eggs, and meats. I often make the lunch or appetizer pictured above: crusty bread, whipped feta (or cream cheese), sliced tomatoes, basil oil and flaky salt!
I’m also making a quiche because we have SO MANY eggs from our chickens that we can’t keep up! Anyone want eggs?

SUNDAY
Prep/Freezing: Pesto, Basil Oil
MONDAY
Breakfast: Pancakes (It’s summer!)
Lunch: Turkey Sandwiches
Dinner: Bucatini with Pesto and Sliced Tomatoes
TUESDAY
Breakfast: Parfait
Lunch: Quesadillas
Dinner: Roasted Tomato Quiche with Roasted Potatoes
WEDNESDAY
Breakfast: Cereal and Milk
Lunch: Grilled Cheese
Dinner: Marinated Beef Kebabs on the Grill with Hummus
(You can do also do fish or chicken. Or a combo!)
THURSDAY
Breakfast: Bagels and Cream Cheese
Lunch: Tortilla Veggie Roll Ups
Dinner: Grilled Chicken with Cold Noodles with Peanut Sauce
FRIDAY (Last day of school!)
Breakfast: Oatmeal with Toppings
Lunch: Ham and Cheese Sandwiches
Dinner: Restaurant!
