Week of July 24: It's Summer Baby!
We're back from our 2.5 weeks of road trippin' to visit family, and boy is it hot here! But I'm loving all of the summer produce!
I love summer food. Tomatoes, eggplant, peppers, squash… I can’t get enough! All year long, I look forward to a warm tomato from the garden, sliced and eaten between two slices of white bread with some Duke’s.
It will be a scorcher next week, so I plan for no-cook or grilling meals. I might have to turn on the oven for one meal, my favorite shrimp tacos with roasted tomatillo salsa, and it will be worth it!
Week of May 22
SUNDAY
Prep/Freezing: Slicing and Dicing!
MONDAY
Breakfast: Overnight Oats with Berries
Lunch: “Girl-Dinner-Turned-Lunch-for-Kids-and-Mom,” ie Fruit Slices, Crackers, Chicken Salad on a Platter
Dinner: Bucatini with Pesto and Cucumber Salad with Heirloom Tomatoes, Black Olives, and Burrata
TUESDAY
Breakfast: Eggs and Toast
Lunch: Tomato Sandwiches!
Dinner: Shrimp Tacos with Roasted Tomatillo Sauce (Fine, I’m using the oven for this, but it’s worth it!)
WEDNESDAY
Breakfast: Parfait with Berries
Lunch: PB&Js
Dinner: Grilled Rosemary Chicken Skewers and Veggies with Hummus
THURSDAY
Breakfast: Smoothies
Lunch: Salami, Crackers, Fruit
Dinner: Gazpacho with Crusty Fresh Bread
FRIDAY
Breakfast: Toasts with Toppings (avocado, eggs, etc.)
Lunch: Quesadillas
Dinner: Dinner with friends!
