There are several new faces here (yay!), so I thought I’d do a quick introduction. I’m Ashley. I’m the mother of three kids, two in elementary and one in middle school. I love to cook and entertain. I believe sharing food is a way of celebrating family and togetherness. I grew up cooking with my family and have many happy memories in the kitchen. I’m trying to create the same for my family!
My kids are average eaters, I think. They like certain things one week and then don’t the same things the next. My older two are expanding their palates a bit, but my youngest is still pretty picky. We’re working on it. We try not to eat much meat, especially red meat. My daughter decided to become a semi-vegetarian last year, and we’ve somewhat followed suit. She was moved to make that choice after learning what eating meat does for the environment, and as I’ve learned more, I feel the same. Also, our school doesn’t have a cafeteria, so I pack lunches daily. That’s our backstory!
Each weekly meal plan includes breakfasts, lunches, and dinners, including shopping lists and recipes.
This week, we are keeping things simple and cozy: baked potato soup, creamy chicken thighs with lemony rice, and a filling pasta with cauliflower and bacon.

Lunch: Frozen Mini Pizzas
Dinner: Creamy Chicken Thighs with Lemon and Thyme and Mixed Green Salad
THURSDAY
Breakfast: Cereal
Lunch: Pasta Salad
Dinner: Baked Potato Soup with Fixings
FRIDAY
Breakfast: Parfait
Lunch: Bagels and Cream Cheese
Dinner: Pizza Night
