I’m sharing a few family favorites this week. Funny story first. My daughter is a picky eater. It’s always been a bit hard for me. I made her baby food from scratch. We did baby-led weaning. I limited sugar like crazy. She may not have had sugar until her first birthday. She was a great eater as a toddler until one day she wasn’t. I now realize that’s very common, and it will all be fine. But, I still take her nutiriton seriously and try hard to make healthy foods for her that I think she’ll like. She’s expanded her likes a bit over the last year or so. Some of that is thanks to CAMP. Yes, overnight camp with a cafeteria. One of her few letters she sent home last year was to tell me that I needed to learn to make the chicken alfredo that her camp makes. I almost fell out of my chair. I mean, I worked at a camp when I was a teenager. I know things. Before she left for camp she wouldn’t eat meat, and pasta was firmly in the disklike column. That all changed last summer. She also came home with a love for parfaits that has been a welcome additon to our family breakfast menu.
So this week we have some cozy favorites: chicken alfreado pasta, baked potato bar, weeknight bolognese (below), and quesadillas that we made a little fancier.

MONDAY
Breakfast: Yogurt Parfait
Lunch: Bagels with Cream Cheese
Dinner: Creamy Chicken Alfredo Casserole with Salad
TUESDAY
Breakfast: Eggs and Toast
Lunch: Tortilla Rollups with Turkey and Cheese
Dinner: Shrimp and Red Pepper Quesedillas with Chips and Salsa
WEDNESDAY
Breakfast: Cereal
Lunch: Homemade Lunchable (Crackers, Salami and Cheese)
Dinner: Weeknight Bolognese with Salad
THURSDAY
Breakfast: Oatmeal with toppings
Lunch: Sandwich (PB&J and Nutella)
Dinner: Baked Potato Bar!
FRIDAY
Breakfast: Egg Sandwich
Lunch: Mac n Cheese
Dinner: Pizza night
