We’re in recovery mode around here. Covid has hit us hard and slowly. We’ve fallen one at a time, about five days apart. It’s crazy. I’ve spent the time at home with the kids doing home projects, sorting old pictures, and relaxing with them.
Many of my old pictures are of us cooking together over the years. I mentioned last week that I love creating memories in the kitchen. That’s part of it, but I also want to teach them cooking skills so they can feed themselves healthfully after they leave my house. Tear. I felt lucky that I could cook when I left home. I could make easy meals for myself after work and even entertain in my tiny apartments in NYC and DC. Nothing fancy. My appreciation for Ina Garten started then.
One recipe that my kids love to make is parfait cups. Recipes like this are great to do with young kids. They can’t mess them up, unlike many baking projects. They can even get creative with their ingredients and even customize their own little muffin tin. And the mess is minimal.
Other recipe highlights from this week include a couple of EASY family favorites. I have a one-skillet chicken pasta dish that will become one of your go-tos. We’ve made it for years. And a taco salad casserole that is ridiculously old school. Plus, a chicken pineapple bake that’s a hit with even the pickiest kids. We end the week with a hearty slow-cooker meal. Thursdays are our craziest night but feel free to rearrange to your busiest night.

MONDAY
Breakfast: Mini Waffles with Fruit
Lunch: Bagels with Cream Cheese
Dinner: Skillet Penne and Turkey Sausage Supper (One pan!)
TUESDAY
Breakfast: Frozen Parfait Cups
Lunch: Turkey Rollups (Tortillas with sliced turkey and cheese)
Dinner: Taco Salad Casserole + Green Salad
WEDNESDAY
Breakfast: Eggs and Toast
Lunch: Mini Waffle Sandwiches (cream cheese and jelly)
Dinner: Pineapple Chicken Bake with Roasted Broccoli
Prep: Make through step two on slow cooker recipe for tomorrow (Optional)
THURSDAY
Breakfast: Cereal
Lunch: Quesadillas
Dinner: Slow Cooker Chicken Tikka Masala + Garlic Naan + Green Salad
FRIDAY
Breakfast: Oatmeal with Favorite Toppings
Lunch: PB&J Sandwiches
Dinner: Pizza Night
