Week of February 19: One Pot, One Pan, Easy Cleanup
A mini kitchen renovation means streamlined meals!
I started a little kitchen renovation a couple weeks ago. A “mini reni” as I am calling it. I’m an interior designer with a deep love for renovations, and our late 80’s kitchen has been staring me in the face. We have pink granite countertops, a trash compactor, and a tuscan-style backsplash. It’s a before-pic in the making. You can follow along at on instagram: @ashleyperryhome.
I’m doing this largely myself. This is a meal planning newsletter, so I won’t get into details, but I have some DIY experience, plus the ridiculous trait of looking at a project and asking myself, “How hard could it be?” so here we are! This means that all our meals must be streamlined: one pan, a sheet pan, etc.
We love the skillet veggie chili from this week’s menu. It’s incredibly easy, and keeping a couple of cans of beans and diced tomatoes in your pantry means you can make this anytime. The sheet pan fajitas are on heavy rotation around my house, even without a kitchen reno. I also love the greek chicken bowl. It’s filling and delicius. Also a great leftover for work lunch! And who doesn’t love an easy sweet-and-sour meatball recipe? It’s a kid favorite.

Breakfast: Bagels with Cream Cheese
Lunch: Grilled Cheese
Dinner: Out to dinner
