Week of April 2nd: A short week!
We leave town for the Easter holiday on Thursday so it's a short week.
Easter break starts on Thursday afternoon so it’s mercifully a short week. I’m so glad because I feel like we’ve been running around a lot lately. We’re going to Charleston to visit my sister, and I can’t wait! I’ll talk about this in another email, but we’re a household divided. Louisa is a vegetarian (except Chick Fil A), I try to not eat red meat, and Clark might as well be on Keto because he eats so much meat. So, for meals like the beefy tacos and the calzones below, I like that I can easily adjust the fillings. I don’t want to make an entirely separate meal, but I can make a few adjustments and make everyone happy-ish.

Lunch: Ham and Cheese Sandwich
Dinner: Calzones with Salad
TUESDAY
Breakfast: Eggs and Toast
Lunch: Bagel and Cream Cheese
Dinner: Crispy Ground Beef Tacos (Avocado Tacos for me and Louisa)
WEDNESDAY
Breakfast: Cereal
Lunch: Leftover Calzone
Dinner: Linguini with Shrimp Scampi and Roasted Broccoli
THURSDAY
Breakfast: Parfait
Lunch: Nutella Sandwich
Dinner: We’re leaving town for Easter!
FRIDAY
We’ll be out and about on Friday!
