Meals for the Bleachers!
Recipes you can take on the go as you shuttle from field to pitch to ring
We’re in full spring sport mode around here. Our spring sports are - let’s just be honest - time consuming. . I love this time of year - really, I do! But, with weeknight practices and multiple weekend games/shows, I often find that we are eating at the ball field or in the car. It can be hard to keep things healthy when running around. We’ve spent too many nights eating CookOut on the bleachers. So, I’m trying something new. I’m going to bring healthy-ish meals with us. I bought this casserole carrier. These are cute, too: plaid and picnic ready and a smaller version. I also have a small cooler carrier. (BTW, I’ve taken this as a hostess gift, filled with wine, crackers, and chicken salad when we’ve been invited to weekends away.) I also have these melamine plates. It’s a picnic, but weeknight-dinner style. If you also have this issue, message me. Maybe we can crowdsource on-the-go recipes, and I’ll put them together in a big list!
Week of April 30
SUNDAY
Prep: You can assemble the sliders, if desired.
MONDAY
Breakfast: Oatmeal with Toppings
Lunch: Mac and Cheese
Dinner: Hot Ham and Cheese Sliders with Caprese Salad Skewers
These are sliders, so they can pack up easily. This makes 24. Save some for lunches later in the week. About the skewers: food on a stick is just more fun!
TUESDAY
Breakfast: Bagels with Cream Cheese
Lunch: Grilled Cheese Sandwiches
Dinner: Pepperoni Pizza Roll Ups with Italian Salad
I used to make these roll ups often for my kids’ lunchboxes but they’ve fallen off the rotation for some reason. My kids loved them! The Italian salad is so good. You can add leftover deli meat for an entree version.
Prep: Season the chicken cutlets
WEDNESDAY
Breakfast: Parfaits
Lunch: Leftover Ham and Cheese Sliders
Dinner: Southwest Chicken Rice Bowls
I plan to put these in thermos containers. And I’ll make these vegetarian for my non-meat eaters.
THURSDAY
Breakfast: Cereal with Milk
Lunch: Banana Bread with Cream Cheese
Dinner: Quesadillas with Black Bean Salad
You can make these plain cheese or add shredded pork. I put pork on the shopping list, but we’ll probably do plain cheese.
FRIDAY
Breakfast: Toasts with toppings (avocado, cheese, etc)
Lunch: DIY Lunchable
Dinner: Concession night! It’s okay once a week, right?
